Starting the fire in
your SHICHIRIN
-
Place lightly crushed news
paper (half page size, about 4-5) on the fire grate, then 3-4 solidly
squeezed pieces on top.
-
Place two or three six inch
slivers of kindling wood on top of the paper. (you
may try used disposable chopsticks, these come with the SHICHIRIN)
-
Then place 3-4 pieces of SUMI
(Japanese charcoal) which come with the SHICHIRIN.
-
If the long size fire place
matches are not handy, make a paper taper and light your kindling through
the draft door.
-
When the fire starts, wave the
UCHIWA (fan) to flow air up from the draft door,
the fan serving as bellows for your oxygen supply.
-
You may stop the fanning when
you see a reddish glow on the bottom of the SUMI
(charcoal).
-
When you want to broil Steaks,
fish and other materials, you have to wait until all SUMI are aglow for
sufficient high heat cooking. While waiting, we suggest placing on the
unit, a pan or a kettle to boil water (or to warm
up soup). When the water start boiling, it is the time to start cooking.
To get your desired heat, adjust and control the air supply, using the
draft door.
-
We highly recommend to use of
the provided gloves included in your SHICHIRIN package.
-
The charcoal lighting
equipment (HIOKOSHI) which can be used quickly and
easily on your kitchen gas range, is available as a separate accessory.
When transferring the lighted coals, use a metal tray (such as a
metal pie pan) under the HIOKOSHI to prevent dropping any hot embers.
